Lysine is one of the nine amino acids the body cannot make. USDA measures amino acids by ion-exchange chromatography after acid hydrolysis of the protein, and reports them in grams per 100 g of food. Only the analytical datasets carry these values: FNDDS records do not report amino acids.
Protein concentrates, dried egg, hard cheeses, dried fish and lean meats head the list, following total protein. Among plant foods, soy and other legumes are relatively rich in lysine, while cereals are comparatively low in it, which is why the two groups are often combined.
