Tryptophan is the least abundant essential amino acid in most proteins and the precursor of serotonin and niacin. Because the usual acid hydrolysis destroys it, USDA determines it separately after alkaline hydrolysis, and fewer records report it than report the other amino acids.
Dried egg white, spirulina, soy protein, seeds, hard cheeses and some fish rank highest. Turkey, often named for its tryptophan, contains about as much per gram of protein as other meats.
